This is quick to make and is the perfect comfort food on a rainy day
- Groundnut oil
- 350g beef (cut into strips)
- Tsp coriander seeds
- 4 cloves
- 4 allspice berries
- 2 star anise
- 1/2 tsp cinnamon
- 6 spring onions (finely chopped)
- 2 handfuls spring greens (roughly chopped)
- 500ml Beef stock
- Pinch of chilli flakes
- 2 tablespoons of soy sauce
- 1 tsp fish sauce
- 2 garlic cloves (grated)
- Piece of ginger (grated)
- 300g udon noodles
- 2 handfuls of Soybeans
Heat a little groundnut oil in a pan. Add the beef and fry for several minutes, on a medium heat, stirring occasionally, until browning on all sides.
Grind the coriander seeds, cloves, allspice berries, star anise and cinnamon together in a pestle & mortar or blitz in a coffee grinder.
Add the spices to the pan and stir the beef, to coat all sides. Add the spring onions and greens and cover with the beef stock. Stir in the chilli flakes, soy sauce, fish sauce, garlic and ginger.
Bring to a boil and simmer for 15 minutes.
Add the noodles and soy beans and continue to cook for 3 minutes.
Divide between 2 bowls and serve immediately.
