- 3 bananas (mashed)
- 150g honey
- 3 eggs
- 100g coconut oil
- 350g wholemeal flour
- 7g bicarb
- Pinch of salt
- 50g chia seeds
- Handful of roughly chopped hazelnuts
In a large bowl mix the bananas, honey, eggs & oil.
Add the flour, bicarb, and salt, and mix well. It should still be quite lumpy. Add the Chia seeds and stir through.
Pour the mix into a greased and lined loaf tin. Sprinkle the hazelnuts evenly over the top.
Cook in the centre of a pre-heated oven at 170 degrees Celsius for approximately 60 minutes, or until a skewer can be inserted and cleanly removed.
