Great served with watercress, spinach & peppery rocket.
- 2 turkey escalopes
- 1 egg
- 1 tsp mustard
- 2 tablespoons dried breadcrumbs
- Olive oil
- 1 lemon
Mix together the egg and mustard in a bowl. Put the bread crumbs into a separate bowl.
Dip the turkey steak into the egg mixture, making sure to coat all sides. Next push the steak into the bread crumbs, until fully coated.
Heat a little olive oil in a frying pan and cook the steak for about 5 minutes on each side, until golden in colour and cooked through.
Slice and serve drizzled with a little fresh lemon juice.
