A slow cooked, but super easy one pot dish.
- 2 Chicken breasts – approx 400g (diced)
- 100g Chorizo sausage (cut into chunks)
- 2 bell peppers (diced)
- 1 Aubergine (diced)
- 2 Courgettes (diced)
- 1 onion (finely chopped)
- 1 bottle of red wine
- 2 handfuls of rice
Stick all the ingredients, except the rice into a Dutch oven, or casserole dish.
Slow cook for 2-3 hours on a low heat.
Add the rice in the last hour, stirring regularly.
