Chicken & chorizo casserole

A slow cooked, but super easy one pot dish.

Ingredients:

  • 2 Chicken breasts – approx 400g (diced)
  • 100g Chorizo sausage (cut into chunks)
  • 2 bell peppers (diced)
  • 1 Aubergine (diced)
  • 2 Courgettes (diced)
  • 1 onion (finely chopped)
  • 1 bottle of red wine
  • 2 handfuls of rice

Method:

Stick all the ingredients, except the rice into a Dutch oven, or casserole dish.

Slow cook for 2-3 hours on a low heat.

Add the rice in the last hour, stirring regularly.
