Rose and apricot jam

This is fancy jam, not one for the kids – keep it for yourself! Almost as good as Blackberry whiskey jam.


  • 650g apricots
  • Juice of 1 lemon
  • 250ml rose wine
  • 650g sugar


De stone and cut the apricots into small pieces.

Put the Apricots, lemon juice and rose wine into a large pan with the sugar and bring to a boil. Stirring until the sugar has dissolved.

Boil rapidly, without stirring for around 10 – 15 minutes until setting point is reached.

Leave to cool for 10 minutes, before pouring into warm, sterilised jars.
