Chilli and chocolate is one of my favourite combinations.
- 300g really dark chocolate
- 300g light soft brown sugar
- 250g butter
- 220g plain flour (sifted)
- 4 eggs
- 1 teaspoon of chilli flakes (optional)
Preheat your oven to 180 degrees Celsius
Put the chocolate, sugar, butter and chilli (if using) into a pan and slowly heat until dissolved
Meanwhile separate the egg whites and yolks. whisk the whites to form soft peaks
Take the chocolate mix off the heat and stir in the flour and egg yolks. Fold in half the egg white, followed by the other half
Pour into a greased and lined baking tray
Cook for around 20-25 minutes until springy to the touch. Leave to cool fully before cutting into squares.
