This is a fantastic little recipe, that we can’t stop making in our house. I got the recipe from Luke Molony at Moorforge Viking settlement. Luke first made this for us on one of our visits to Cumbria.
- 6 pork loin fillets
- ‘Season all’ spice mix
- 4 tablespoons of Ketchup
- 4 tablespoons of BBQ sauce
- 4 tablespoons of Cola
- A shot glass full of honey whiskey or akvavit
Rub each piece of pork with the ‘season all’
Mix together the rest of the ingredients, and pour over the pork. Leave to marinade for an hour or 2.
Cook the pork on a BBQ, or in the oven at 180 degrees Celsius, turning occasionally, until cooked through.
Serve with Couscous, rocket and cherry tomatoes.
