Bored of the usual ham sandwich, I was looking for a healthy alternative, so here it is! This is a very filling vegetarian sandwich.
Ingredients:
1 can of chickpeas (drained)
1 handful sultanas
120g natural yoghurt
1 tablespoon curry powder
1 tsp ground coriander
1 tsp cumin
To serve;
Small bunch of fresh coriander
Bread (ideally sourdough)
Butter
Method:
Roughly mash the chickpeas. Add the rest of the ingredients and mix thouroughly.
Make a sandwich, garnishing the chickpeas with a little fresh coriander
