Drink straight, as a mixer, or add a splash to Gravadlax
- 2 tsp caraway seed
- 2 tsp cardamom
- 2 tsp fennel
- 2 tsp cumin
- 2 tablespoons dark brown sugar
- 2 sprigs of dill
- 2 cloves
- 2 star anise
- Rind of 1 lemon
- Rind of 1 orange
Stick all the ingredients into a large, clean container. A Kilner jar works well.
Leave for 2-3 days, before straining through a muslin cloth.
Store in the freezer, and serve ice cold
