Potato farls

This is a pretty versatile Irish recipe. Serve with eggs & bacon, jam, or as an alternative to pancakes.

  • 450g potatoes
  • 50g butter
  • 120g self raising flour

Peel and chop the potatoes, stick them in a pan, cover with water & boil until soft.

Drain the water and mash the potatoes, with the butter and flour.

Tip out onto your work surface and knead for a couple of minutes.

Form into a ball and roll out to about 1cm thick. Cut into 8 triangles.

Heat a little oil in a frying pan and fry for several minutes, until golden and browning. Flip, and cook for a few more minutes.
