5 Minute vegan flatbread

With no yeast, or proving required, these are a great, last minute addition to any meal.

Makes 3 flatbread

Ingredients:

  • ½ a tin of coconut milk
  • 200g white bread flour
  • ½ a tsp salt
  • 50g desiccated coconut
  • Handful of sultanas
  • Coconut oil

Method:

Mix the flour, salt, coconut and sultanas together in a bowl. Add the coconut milk and mix together to form a dough.

Knead for a couple of minutes.

Dust your work surface with a little flour and split your dough into 3 even pieces.

Form each piece into a ball and roll out to about ½ centimetre thick.

Heat a little coconut oil in a frying pan and cook each flatbread for a few minutes on each side.
