Turkey escalopes

Great served with watercress or peppery rocket, potato wedges and a wedge of lemon on the side.

Serves 2

Ingredients;

  • 2 turkey escalopes
  • 1 egg
  • 1 tsp mustard
  • 2 tablespoons dried breadcrumbs
  • Olive oil

Method:

Mix together the egg and mustard in a bowl. Put the bread crumbs into a separate bowl.

Dip the turkey steak into the egg mixture, making sure to coat all sides. Next push the steak into the bread crumbs, until fully coated.

Heat a little olive oil in a frying pan and cook the steak for about 5 minutes on each side, until golden in colour and cooked through.
