Sweet & sour

This is a fantastic vegan alternative to a Chinese take away. If you don’t like mushrooms try using cauliflower instead.

Serves 4

Ingredients:
For the battered mushrooms;

  • 100g corn flour
  • 100g plain flour
  • pinch of salt and pepper
  • 75-100ml water
  • 50g shiitake mushrooms (sliced)
  • vegetable oil

For the sweet & sour;

  • 1 small can of pineapple chunks (drained, but keep the juice)
  • 1 tbsp cornflour
  • 2 tbsp dark soy sauce
  • 2 tbsp cider vinegar
  • 2 tbsp tomato ketchup
  • 2 tbsp brown sugar
  • ½ tsp dried chilli flakes
  • 1 tablespoon of toasted sesame oil
  • 1 medium onion (chopped)
  • 1 green pepper (De seeded and chopped)
  • 1 carrot (trimmed and sliced)
  • 2 garlic cloves (peeled and finely chopped)
  • Thumb sized piece of root ginger (peeled and grated)
  • Salt and pepper (to taste)

Method:

For the battered mushrooms;

Mix together both the flours and add a pinch of salt and pepper. Slowly add in just enough water to makes a thick batter.

Add the mushrooms to the batter and mix well, coating all sides.

Heat a little vegetable oil in a pan and when it’s hot, add the battered mushrooms.

Cook for a few minutes, tossing occasionally, until crisp and golden on all sides. Leave to one side.

For the sweet & sour;
Put the cornflour into a bowl and add 3 tablespoons of pineapple juice. Mix to a smooth paste. Add the rest of the juice, soy, vinegar, ketchup, sugar and chilli. Mix well.

Heat some oil in a large pan and fry the onion, carrots and pepper for a few minutes.

Add the pineapple, garlic and ginger and stir fry for a few minutes.

Stir the cornflour/pineapple mix and add it to the pan, season well and bring to a simmer.

Cook for 5 minutes and add the battered mushrooms, cook for a further 5 minutes, stirring occasionally, until the sauce is thick and sticky.

Serve with rice and prawn crackers.
