Whilst you could make this with beef or lamb, goat is the healthier option and is quite similar to beef. I don’t know why we don’t eat more of it, its very underrated meat.
Its lower in fat, calories and cholesterol than pork, lamb, chicken and beef, whilst being high in iron and protein. Due to its low levels of saturated fat its also said to improve cholesterol.
- 150g Egg noodles
- 250g diced goat
- Tablespoon of groundnut oil
- 3 spring onions (finely chopped)
- 2 cloves of garlic (finely chopped)
- Small piece of ginger (finely chopped)
2 carrots (cut into sticks)
- Handful of red cabbage (roughly chopped)
- 1 red pepper (cut into sticks)
Handful of soy beans
- Tablespoon of soy sauce
- Teaspoon of fish sauce
- Pinch of chilli flakes
Put the noodles in a pan of water and cook for 4-5 minutes.
Heat the groundnut oil in a frying pan or wok. Add the goat and cook for a few minutes, turning occasionally, until nicely browning.
Add the onion, garlic and ginger and fry for a few minutes.
Add the rest of the ingredients and cook for a few more minutes.
Drain the noodles and serve immediately, topped with the fried veg and goat.
