Spicy lentil soup

Lentils are one of the oldest domesticated pulse crops in the world, having been found alongside human habitations dating back to 11,000BCE.

They are a great source of protein & carbohydrates and a good source of fibre, calcium, iron and B vitamins – making them an important staple food all over the world.

Serves 2

Ingredients:

  • 2 tins of chopped tomatoes
  • 160g of red lentils
  • 2 carrots (roughly chopped)
  • 1 onion (peeled and roughly chopped)
  • 1 clove of garlic (sliced)
  • 10g ginger (peeled and sliced)
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 vegetable stock cube
  • 1l hot water
  • Pinch of chilli flakes
  • Coriander (for serving)

Method:

Stick all the ingredients in a pan. Bring to a boil and simmer for 20-25 minutes, stirring occasionally.

Blitz with a hand blender and served topped with a little coriander
