Mulled cider

This is the season for a wassail. We like to make this to accompany my apple and mead cake, although we substitute the mead for cider.

We drink it around a fire, offering some of the cider to our garden fruit trees.

Yesterday we took some out to a local woodland and used it to warm ourselves whilst volunteering and maintaining the woodland pathways.

Ingredients:

  • 2 bottles dry cider
  • 3 heaped tablespoons brown sugar
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 4 cloves
  • 1/2 teaspoon freshly grated nutmeg
  • 6 allspice berries
  • 3 large cap fulls of brandy or sloe gin

Method:

Stick all the ingredients into a large pan and heat gently for 5-10 minutes until warm through. Do not boil.

Strain through a muslin cloth or tea-towel and serve immediately.
