There is always a little bread in our house that is past its best. Most often its the end of a loaf of sourdough, as I rarely make any other loaves these days.
Rather than throwing away the ends I have been storing them in the freezer.

Today, as we were having soup for lunch I got the stale bread out of the freezer and put them to good use.

These are really easy to make. You can use any type of bread. 

Ingredients:

  • Slightly dry/stale bread
  • Olive oil
  • Butter
  • Salt and pepper

Method:

Cut the bread into cubes and put them into an oven proof dish or tray. Optionally you can remove the crusts, but why waste them?

Drizzle with olive oil and add a few knobs of butter to the tray. Season with salt and pepper.

Place in the centre of a pre-heated oven at 200 degrees for around 10 – 15 minutes, occasionally giving them a mix up to get all sides coated with oil and butter, so as to achieve maximum crispyness.
