Pancakes are not just for February. Serve however you like them. Lemon and sugar? Bananas and Nutella? We have even done them with duck!

Every recipe I have ever come across for pancakes, claims they make more than they actually do. This recipe will make 6.

  • 100g plain flour (sifted)
  • 2 eggs
  • 300ml milk
  • Pinch of salt
  • Butter


Whisk together all the ingredients in a jug until smooth.

Melt some butter in a pan on a medium heat and add a ladle full of batter to the pan.

Cook for a minute or 2 on each side, until golden brown.

While you make the rest of the pancakes, keep the finished ones warm in the oven on a low heat, with a sheet of baking paper between each pancake.
