Much quicker and easier to make than mince pies, and without the need for the long maturing time of a Christmas cake.
Makes 12 cupcakes
- 175g self raising flour (sieved)
- 100g vegetable spread
- 100g light brown sugar
- 3 tablespoons of Aquafaba (or 1 egg for non vegans)
- 1 tsp mixed spice
- 1 tsp cinnamon
- 1/2 tsp ground cloves
- 1/2 tsp freshly ground nutmeg
- 1/2 tsp ground ginger
- 12 tsp mince meat
Put all the ingredients, except the water and mince meat into a large bowl.
Have some water ready and slowly mix the ingredients together with an electric mixer, adding a little water at a time, until you get a smooth cake mix. You don’t want the mix to be too wet, so add just enough water to bring everything together.
Add the mince meat to your cake batter and mix well. Split the mix between cupcake cases.
Cook in the centre of a pre-heated oven at 170 degrees for 15-20 minutes, until golden in colour and springy to the touch.
