Spiced apple cake

Apples and spices are the first things I think of in Autumn – that and firelit evenings, mulled wine and the coming fetivities – Halloween, Bonfire night and Christmas!


  • 80ml cider
  • 50ml olive oil
  • 2 eggs
  • 320g plain flour
  • 1 tsp baking powder
  • 280g dark soft brown sugar
  • 2 teaspoons ground mixed spice
  • 2 teaspoons ground ginger
  • 2 teaspoons cinnamon
  • 2 apples


    In a large bowl mix the cider, eggs and olive oil.

    Add the flour, baking powder, sugar, cinnamon, ginger and mixed spice and mix well. Grate in one of the apples and mix well.

    Pour into a greased oven dish. Slice the second apple and spread evenly over the surface of the cake.

    Cover with a piece of foil, to prevent burning.

    Cook in the centre of a pre-heated for 40-45 minutes at 180 degrees Celsius. Remove the foil for the last 5 minutes, to allow the top of the cake to brown a little.

    Allow to cool before slicing.
