Apple & pumpkin soup

The perfect autumn soup – sweet apples, mixed with pumpkin and warm spices. Use apples from the garden, or forage some. They are everywhere this time of the year. Beware if using tart apples like cooking apples or crab apples, reduce the apple amount or add some more honey

Serves 2


  • 1 small pumpkin (peeled and cut into chunks)
  • 2 apples (diced)
  • Splash of olive oil
  • 1 vegetable stock cube
  • 1/4 tsp cinnamon
  • 1/4 tsp freshly ground nutmeg
  • 1/4 tsp ginger
  • 1/4 tsp ground cloves
  • 2 tsp honey
  • Salt & pepper (to taste)


      Add all the ingredients to a pan and cover with water. Bring to the boil and simmer for around 10 minutes until the pumpkin is soft.

      Blitz the ingredients well with a hand blender and serve with freshly toasted sourdough.
