Coconut macaroons

Simple, yet satisfying. These macaroons are really tasty and can be made in just a few minutes. Great for making with kids.

 Ingredients:

  • 2 free range eggs
  • 200g desiccated coconut
  • 160g caster sugar
  • 150g Dark chocolate (optional)

Method:

DSC_1699Beat the eggs in a bowl. Add the coconut and the sugar and stir well.

Spoon the mixture into cupcake cases and cook in the centre of a preheated oven at 180 degrees for 15-20 minutes, until golden brown.

Melt the chocolate in a pan and spread evenly over the top of the macaroons.
